asian style veggie soup


  • 2 tablespoons olive oil
  • 1 leek (or onion)
  • 3 cups of mixed mushrooms (whatever you can find, Enoki are great as they are like noodles)
  • 2 carrots
  • 1 zucchini
  • 1 teaspoon/clove crushed garlic
  • 2 teaspoons crushed ginge
  • 3 L stock
  • 1 tablespoon soy sauce, optional



  1. Wash leek and slice in half long ways and then cut into slices (if using onion, dice)
  2. Heat oil in pan on medium heat and add leeks (or onion)
  3. Whilst this is cooking, wash and roughly cut mushrooms, slice carrots into circles and dice zucchini (stir leeks occasionally and turn down heat when they start to brown)
  4. Add garlic, ginger and veggies. Fry for five minutes, stirring occasionally
  5. Add stock and bring to the boil
  6. Reduce heat and simmer for 20 minutes or until cooked
  7. Add soy sauce (optional)



Add any veggies, herbs or spices you like. Add some canned four bean mix or dried soup mix or chicken if you want to make it into a meal. Would be great with a little fresh or dried chili.
