Beetroot tzatziki and salad on a stick is a great recipe to make with kids. It’s time to get colourful and creative with this twist on a classic tzatziki. And this fun, pink dip goes perfectly with salad on a stick, because children just love things on sticks. Makes a great afternoon snack. And let the kids design their own sticks!

Ingredients

Serves: 4
Prep: 20 mins

Beetroot tzatziki

  • 1 fresh beetroot
  • 1 handful fresh mint
  • ½ a lemon
  • 1 garlic clove, crushed (optional)
  • 200ml natural yoghurt

Salad on a Stick

  • Salad veggies (cucumber, cherry tomatoes, olives, red/green/yellow capsicum, mushrooms, celery)
  • Basil leaves
  • Tasty cheese or feta (optional)
  • Kebab sticks or toothpicks
  • Pita bread or mountain bread, ripped into pieces or baked into a bowl shape (leave out to make this gluten free)

Directions

Beetroot Tzatziki

  1. To make dip, wash and grate beetroot
  2. Wash and tear mint
  3. Juice lemon and crush garlic
  4. Mix grated beetroot, mint, lemon, garlic and yoghurt together in a small bowl

Salad on a Stick

  1. Wash veggies
  2. Cut salad vegetables into large chunks
  3. Cube cheese
  4. Thread veggie chunks, cubed cheese and basil leaves onto sticks

Notes

For larger sticks thread veggies, basil and cheese onto wooden skewer.

For smaller sticks thread onto tooth picks.

Try different combinations of veggies, cheese and herbs on different sticks.
