These amazing crumpelets are a cross between a crumpet and a pikelet. What a great alternative to toast, why not try them with our chia jam!

🕒 Prep: 15-20 mins Cook: 3 mins

Ingredients

  • 2 cup water
  • 2 cup milk
  • 2 teaspoons dried yeast
  • 2 cups white self-raising flour
  • 2 cups wholemeal self-raising flour
  • 1 teaspoon caster sugar
  • 4 tablespoons extra virgin olive oil

Directions

  1. Place water and milk in bowl and microwave on high for 1 minute until hot
  2. Remove from microwave and stir in yeast
  3. Leave for 10-15 minutes until mixture is frothy
  4. Combine flour and sugar in a bowl
  5. Make a well in the centre
  6. Pour in milk mixture and oil
  7. Whisk until combined
  8. Place egg moulds in hot pan and grease with oil or butter
  9. Fill each mould 1/3 of the way with mixture
  10. Cook until bubbles form on the surface
  11. Remove moulds and flip over cooking for further 30 seconds
