Donut Muffins

Insipred by Chanuah, these donut muffins are so much fun to make and eat!

Ingredients

  • 1 cup frozen raspberries, defrosted
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla essence
  • 2 teaspoons maple syrup or honey
  • 2 cups self raising flour, ideally wholemeal or half wholemeal and half white
  • 1/3 cup sugar
  • 1/3 cup extra virgin olive oil
  • 3/4 cup milk
  • 2 eggs
  • 1/2 tablespoon olive oil spread or melted butter
  • 2 teaspoons sugar, for topping
  • 1/2 teaspoon cinnamon

Directions

  1. Preheat oven to 180°C
  2. Lightly oil 12 cupcake cases or use reusable cupcake cases
  3. In a small bowl mix raspberries, chia seeds, vanilla and syrup (set to side whilst you make batter)
  4. In a large bowl mix flour and sugar
  5. Add oil, milk and eggs and mix with wooden spoon (try not to over mix)
  6. Spoon heaped tablespoons of mixture into cupcake cases or muffin tin (use about 2/3 of the mixture)
  7. Add a teaspoon of raspberry jam mixture into centre of muffins
  8. Top with 1/2 tablespoon batter, to cover jamDonut Muffins 2
  9. Bake for about 20 minutes (until lightly browned)
  10. Allow to cool slightly
  11. Mix together cinnamon and sugar
  12. Whilst still warm, spread muffins with melted butter or olive oil spread and sprinkle with cinnamon sugar

 

Notes

Try making other flavours of jam by using other fruit in place of raspberries.
