Fluffy Fruity Pancakes

My 12 year old and I went out for brunch one day. We had fluffy, fluffy pancakes. Much nicer than the ones I usually make apparently, well until now…Try these delicious fluffy, fruity pancakes and see what you think. I also use this batter in my waffle maker.

Makes: 6-8 
Prep: 20 mins  Cook: 20 mins

Ingredients

  • 1 tablespoon butter
  • 2 cups wholemeal self-raising flour (or try half wholemeal and half white)
  • ½ teaspoon baking powder
  • 1½ cups milk
  • 2 eggs
  • ¼ cup maple syrup or sugar/sweetener of your choice
  • Extra virgin olive oil for frying
  • Fruit of your choice (this batch used 1 banana and 1/2 cup frozen berries)
  • 1 teaspoon vanilla essence, optional

Directions

  1. Melt butter in a bowl in the microwave
  2. Mix flour and baking powder in large bowl
  3. In smaller bowl mix melted butter, syrup, milk and eggs
  4. Add wet ingredients to dry
  5. Mix with electric beaters, start on low to combine and then high for 1 minute
  6. Allow mixture to rest for 10 mins
  7. Heat oil in pan (just enough so it covers base) on medium heat
  8. Add ladle full of mixture (about 1/2 a cup) or more or less depending how big or small you want them
  9. Add some fruit (fresh or frozen berries or sliced banana)
  10. Once pancake starts to form bubbles on top, flip over
  11. Cook until both sides brown slightly (about 2-3 mins each side)
  12. Continue making different flavour combinations

Notes

Use any fruit or nuts or seeds to create your own delicious flavours.
