Ingredients

  • 3 cups assorted fruit cut into 1-inch cubes: peaches, pineapple, bananas, strawberries, mango, kiwi fruit, honey dew, blueberries, grapes, rock melon
  • 1 small handful of mint leaves (optional)
  • 2 cups plain, low fat Greek yogurt
  • 1/4 cup frozen raspberries, defrosted
  • 2 cups muesli or make your own (see ‘notes’ section)
  • 15 6-inch bamboo skewers

Directions

  1. Soak bamboo skewers in water for 20 minutes
  2. Cut fruit into chunks (you can use a cookie cutter if you wish)
  3. Skewer fruit and mint
  4. Mix raspberries with yogurt to make your own raspberry yoghurt
  5. Serve yogurt and muesli in shallow serving bowls
  6. Dip fruit into yogurt, and then muesli as you eat it

Notes

Try grilling fruit skewers on the BBQ

Try making salad on a stick with veggies instead of fruit

Make your own muesli:  Mix together a combination of oats, cinnamon, shredded coconut,  nuts (e.g. almonds, cashews), dried fruit (e.g. sultanas, dried apricot), sesame seeds, pepitas and sunflower seeds.  If desired, toast oats by placing on a baking tray and baking in pre-heated 180oC oven for 15 minutes.  Toast nuts and seeds in a dry frying pan, stirring continuously until golden brown.
