My kids love these fruity pancakes for breakfast on a weekend or school holiday morning. Or they make a fun after-school snack.

Ingredients
- 1 egg
- 1 cup milk
- 1 cup self raising flour (I use wholemeal)
- Your choice of fruit and nuts (banana, strawberry or frozen berries work great as do slithered almonds or pecans)
- Oil for frying, sunflower or extra virgin olive oil
Directions
- Whisk together eggs, milk and flour
- Cut fruit into slices
- On medium/low heat, heat a little oil in a frying pan
- Spoon pancake mixture into pan
- Top with fruit and nuts of choice
- When batter starts to bubble, flip pancake
- Cook on other side for a few minutes
- Repeat with remaining mixture, adding a little oil to pan before each pancake if needed
Notes
If you wanted a fun lunch, you could make these with grated cheese in place of fruit and nuts.
