Ingredients

  • 1 large sweet potato
  • 2 potatoes
  • About 2.5 cups 00 flour
  • Extra flour for rolling

Directions

  1. Wash, peel and roughly chop the potatoes
  2. Bring a pot of water to the boil and boil potatoes until they are soft (around 8-10 mins)
  3. Drain potatoes and leave to cool
  4. Once cooled mash potatoes
  5. Tip mashed potatoes onto a clean flour dusted surface
  6. Sprinkle with 1/3 of a cup of flour and mix in quickly
  7. Mix in remaining flour in two batches ensuing not to over work the dough
  8. Divide mixture into thirds and roll each portion into a long rope 2cm thick
  9. Cut rope into 2cm pieces
  10. Bring a pot of water to the boil
  11. Drop gnocchi into water and let boil for a couple of minutes until they rise to the surface
  12. Once risen to the surface remove and lay on tea towel to drain
