  • 4 ripe tomatoes (or 1-2 punnets of cherry tomatoes)
  • 2 cucumbers
  • 1-2 avocadoes
  • 1 red onion, optional
  • 1 yellow or red capsicum
  • 4 tablespooons marinated olives
  • 1 cup marinated feta
  • 1 handful of dill, optional



  • ½ cup extra virgin olive oil
  • ½ cup red wine vinegar
  • 2 cloves garlic, and minced
  • 1 tablespoon oregano
  • 1-2 teaspoons sugar

Salt to taste, optional



  1. Coarsely dice the tomatoes, cucumbers and capsicum. Slice the red onion into rings. Peel, remove pit of avocado and cut into chunks. Add all to bowl
  2. Pit olives and slice. Break the feta into chunks. Add to other vegetables
  3. In a jar add all of the dressing ingredients and shake. Drizzle the salad with dressing and toss to combine.
  4. Chop the dill and sprinkle over the top of the salad
