Are you looking for a way to make your regular side-salad more exciting? Well then you must try this super-fresh and colourful greek salad with a twist of some delicious ingredients.

  • 4┬áripe tomatoes (or 1-2 punnets of cherry tomatoes)
  • 2┬ácucumbers
  • 1 yellow or red capsicum
  • 1┬áred onion, optional
  • 1-2 avocados
  • 4 tablespoon marinated olives
  • 1 cup┬ámarinated feta
  • 1 handful of dill, optional


  • ┬Ż cup extra virgin olive oil
  • ┬Ż cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon oregano
  • 1-2 teaspoons sugar
  • Salt to taste, optional


  1. Coarsely dice the tomatoes, cucumbers and capsicum
  2. Slice the red onion into rings
  3. Peel, remove pit of avocado and cut into chunks
  4. Add tomatoes, cucumbers, capsicum, onion and avocado into bowl
  5. Pit olives and slice
  6. Break the feta into chunks
  7. Add olives and feta to other vegetables
  8. In a jar, add all of the dressing ingredients and shake. Drizzle the salad with dressing and toss to combine
  9. Chop the dill, sprinkle over the top of the salad and enjoy
