green eggs and bacon

Ingredients

  • 1/2 tablespoon Extra Virgin Olive Oil
  • 1/2 rasher bacon (eye – we use natural Nitrate free bacon)
  • 1/4 zucchini
  • 1/2 -1 cup fresh spinach
  • 2 eggs

Directions

  1. Dice zucchini and bacon
  2. Heat oil in fry pan on medium heat
  3. Add zucchini and bacon
  4. Cook for 5 minutes (or until desired crunchiness), stirring occasionally
  5. Add spinach to pan and stir
  6. Lightly whisk eggs in bowl
  7. Add eggs to fry pan
  8. Cook for 3-5 minutes (until eggs cooked to your liking), stirring occasionally
  9. Serve in a wrap, on toast or with a side salad

Notes

  • Try adding any veggie you like, red capsicum, onion, mushroom
  • Great for breakfast, lunch or dinner
