Haloumi Zucchini Corn Fritters

Halloumi zucchini and corn fritters are super simple and yummy. Perfect as a snack, in a lunchbox or as part of breakfast, lunch or dinner!

?Serves: 4-6
? Prep: 5 mins    Cook : 5-10 mins


  • ½ cup quinoa (cooked and cooled)
  • 2¼ cups zucchini (grated)
  • ¾ cup halloumi (grated)
  • ½ cup corn (cooked or canned)
  • ½ eggs
  • ¼ cup fresh basil
  • ¼ – ½ cup wholemeal flour
  • 2 tablespoons extra virgin olive oil


  1. Place the quinoa, zucchini, halloumi, corn, eggs and basil into a large bowl
  2. Stir to combine and add enough wholemeal flour to achieve a batter-like consistency (not runny)
  3. Heat oil in a large fry pan over medium heat
  4. Use a tablespoon to add the zucchini mixture, be careful not to overcrowd the pan (depending on the size of your pan, you might fit 4 fritters)
  5. Cook for 3 minutes each side or until cooked through and golden
  6. Remove from the fry pan and cover to keep warm
  7. Add more oil to the pan and repeat with the remaining mixture
