  • 2 cups plain flour (try using half wholemeal), extra flour for kneeding
  • 1 teaspoon salt (iodised salt)
  • ¾ teaspoon baking powder
  • 2 tablespoons olive oil
  • 150ml warm water


  1. Mix flour, salt and baking powder in a bowl
  2. Add warm water and oil and mix
  3. Kneed on lightly floured surface for two minutes
  4. Roll dough into a ball, cover with cling wrap and leave to rest for 10 minutes (this step is important!)
  5. Cut tortilla dough into 6 pieces. Roll into six balls
  6. Take each dough ball and roll it out as thin as you can using a rolling pin
  7. Fry tortillas on medium to hot in a frying pan (or BBQ) for 2-3 minutes on each side. It will start to brown when cooked
  8. Top with your favourite toppings (we like having them Mexican style for dinner or with dips for lunch)
