A colourful, fresh and simple Israeli salad is the perfect addition to any lunch or dinner. Full of flavour and paired with an easy dressing makes this salad stand out on its own or as a side.
Prep: 10-15 mins
- ½ iceberg lettuce
- 2 spring onions
- ½ cup parsley
- 1 red capsicum
- 3 tomatoes
- 1 Lebanese cucumber
- Juice of ½ a lemon
- 2 tablespoons extra virgin olive oil
- Wash and dice lettuce, onion, capsicum, tomatoes and cucumber
- Finely chop parsley
- Mix together in a bowl
- Add lemon juice and olive oil
- Toss together and serve
You can add your favourite salad vegetables to add more colour and flavour, we like to add chickpeas or use red onion.
Great served as a side salad, in a wrap or on top of crusty bread.
