koala crackers and echidna snacks

per serve

  • 2 corn thins (choose one where you can see the grains)
  • 2 teaspoons mayonnaise, mashed avocado or dip of your choice
  • 1 stick red capsicum
  • 1 lettuce leaf
  • small handful of grated cheese
  • 2 cucumber circles
  • 2 carrot circles
  • 2 sultanas
  • 2 dates
  • few pieces of crunchy noodles


To make koala

  1. Spread corn thins with mayonnaise, avocado or dip of your choice
  2. Wash and dry veggies
  3. Cut capsicum into small pieces
  4. Sprinkle cheese and capsicum onto one corn thin
  5. Top with lettuce
  6. Place second corn thin on the top of lettuce to make a sandwich
  7. Place cucumber between corn thins so they look like ears
  8. Place carrots and sultanas for eyes
  9. Place date for the nose

To make echidna

  1. Take a date and insert crunchy noodles as spikes, eyes and nose
