Tis’ the season to get our cooking on, so why not get festive with this layered christmas dip. It’s simple and will bring that extra festive touch to your table.

Ingredients

Red dip

  • 1 red capsicum
  • 3 tablespoons tomato paste
  • pinch sweet paprika
  • 1 tablespoon extra virgin olive oil

    Green dip

    • ½ cup toasted pine nuts
    • 1½ cups fresh basil
    • 1 teaspoon crushed garlic
    • ½ cup finely grated parmesan/pecorino
    • ¼ cup olive oil
    • 3 cups baby spinach leaves

    White layer

    • ½ cup greek yoghurt or sour cream

      Directions

      1. Deseed capsicum and cut into large chunks
      2. Add all red dip ingredients to blender and blend until smooth, remove from blender and clean blender
      3. Add all green dip ingredients to blender and blend until smooth
      4. In a small clear serving bowl, spoon green dip and smooth the top
      5. Carefully spoon the yoghurt/sour cream over the green mixture and gently smooth the top
      6. Top with the red layer and smooth the top
      7. Serve with pita chips (make by baking mountain bread wraps in oven or homemade tortillas) and veggie sticks

      Notes

      This makes a fun edible gift. Remember to store in fridge.
