Mac Cheese

It’s taken me years…but finally my mac and cheese (and veggie) recipe is ready to be shared! This delicious meal will be loved by the whole family big and small.

?Serves: 4-6
Prep: 10 mins Cook: 15-20 mins

Ingredients

  • 1 zucchini
  • ½ head cauliflower
  • 1 head of broccoli
  • 300g macaroni (just over half a packet)
  • 1 tablespoon butter
  • 1 heaped tablespoon plain flour
  • 2 cups milk
  • 250g cream cheese
  • 1 cup tasty cheese
  • ½ cup Parmesan cheese
  • ¼ teaspoon turmeric

Directions

  1. Wash and dice zucchini, cauliflower and broccoli (Why not get the kids involved using our Foost first or next knife?)
  2. Bring a large pot of water to the boil
  3. Add pasta and veggies and boil for 10 mins or until pasta is cooked
  4. In the meantime, make cheese sauce in a medium sized pot by melting butter in pan on medium heat
  5. Add flour, stirring constantly
  6. Add milk and stir constantly with a whisk until no lumps
  7. Stir in cream cheese (you might have to change to a wooden spoon)
  8. Leave mixture to thicken, stirring occasionally (should only take a few minutes – if milk starts to boil, turn down heat)
  9. Add remaining cheese and tumeric and continue stirring until cheese has melted and sauce is smooth
  10. Remove from heat
  11. Drain pasta and veggies
  12. Mix together pasta, veggies and cheese sauce
  13. Enjoy with a salad

Notes

For a delicious veggie pasta bake, try putting pasta, veggies and sauce in an oven proof dish. Top with breadcrumbs and bake at 180ºC for 30 mins
