Mac Cheese

  • 300g macaroni (just over half a packet)
  • 1 zucchini
  • 1 head of broccoli
  • 1/2 cauliflower
  • 1 tablespoon butter
  • 1 heaped tablespoon plain flour
  • 2 cups milk
  • 250g cream cheese
  • 1 cup tasty cheese
  • 1/2 cup Parmesan cheese
  • 1/4 teaspoon tumeric


  1. Wash and dice zucchini, cauliflower and broccoli
  2. Bring a large pot of water to the boil
  3. Add pasta and veggies and boil for 10 minutes or until pasta cooked
    In the meantime, make cheese sauce in a medium sized pot
  4. Melt butter in pan on medium heat
  5. Add flour, stirring constantly
  6. Add milk and stir constantly with a whisk until no lumps
  7. Stir in cream cheese (you might have to change to a wooden spoon)
  8. Leave mixture to thicken, stirring occasionally (should only take a few minutes – if milk starts to boil, turn down heat)
  9. Add remaining cheese and tumeric and continue stirring until cheese has melted and sauce is smooth
  10. Remove from heat
  11. Drain pasta and veggies
  12. Mix together pasta, veggies and cheese sauce
  13. Enjoy with a salad


Try putting pasta, veggies and sauce in an over proof dish. Top with breadcrumbs and bake at 180 for 30 minutes
