mean green apple salad


  • 2-3 cups baby spinach
  • 2 apples, red or green (your choice)
  • green veggies of your choice (try broccoli, snow peas, asparagus, celery,
  • 1/4 cup nuts (roasted are delicious)
  • 3 tablespoons olive oil
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey


  1. Wash spinach and arrange on a platter
  2. Quickly steam (for 2-3 minutes) florets of broccoli and/or asparagus
  3. Wash and dice green veggies to be eaten raw
  4.  Arrange green veggies on spinach
  5. Thinly slice apples and arrange on top of green veggies
  6. Sprinkle with nuts
  7. To make dressing put oil, vinegar and honey in a small jar
  8. Microwave for 10 seconds to melt honey
  9. Place lid on jar and shake to mix


To make nut free, substitute nuts for your favourite seeds

Try adding some shaved Parmesan on top of salad
