Have leftovers and don’t know what to do with them? These mini pies are an easy and fun way to use up leftovers.

Makes: 8 mini pies
Prep:  20 mins Cooking time: 35 minutes

Ingredients

  • About 2 cups leftover bolognese sauce (use our anything sauce or lentil as anything bolognese)
    Or curry or stew
  • 3 medium potatoes
  • 1 small sweet potato
  • Just under 1/4 cup milk
  • 1 tablespoon butter
  • 2 sheets puff pasty (defrosted) then cut each into 4 pieces each
  • 1/2 cup grated cheese

Directions

  1. Preheat oven to 200°C
  2. Cut potatoes roughly into cubes and boil or steam for 20 minutes until cooked through
  3. Grease muffin tin with some oil
  4. Cut pastry into squares and gently press pastry into muffin trays
  5. Fill with leftover sauce
  6. Drain boiled potatoes, add butter and milk and mash with a fork or masher
  7. Top pies with mash and sprinkle some cheese on top
  8. Bake in the oven for 35 minutes

 

Notes

You can add some zucchini or carrot to mash if you like (you might need less milk)

You can make this in an oven proof dish as a larger pie and remove the pastry

You can use tortillas or mountain bread in place of pastry
