This not so caramel slice is a quick and easy treat to make and is a great 'healthier' alternative to the classic caramel slice!

Master 12 and I we were away and he discovered a choc caramel slice at a market that he adored. So I tried to re-create a healthier version. It’s no quite a caramel slice but is delicious and easier to make with no cooking required!

Prep: 15 mins (active time) Setting time: 75 mins

Ingredients

  • 1 1/2 cup oats
  • 1/2 cup shredded coconut
  • 2 tablespoons extra virgin olive oil, plus 1 teaspoon
  • 1 1/2 tablespoon maple syrup
  • 1/2 cup cashews
  • 1/2 cup dates
  • 1/2 cup dark choc melts

 

Directions

  1. To start, soak cashews and dates in 1/2 cup of boiling water and leave for 30 minutes
  2. Meanwhile in a food processor, blitz 1 cup of the oats
  3. In a medium mixing bowl, combine oats (1 cup blitzed and 1/2 cup rolled), coconut, olive oil, maple syrup and 1 tablespoon boiling water
  4. Line a slice pan (18 x 28cm)
  5. Add oat mixture to slice pan and press down with hands (it will only cover about 3/4 of the pan)
  6. Place cashews, dates and boiling water into food process and blitz for 60 seconds or until smooth-ish
  7. Carefully spread this mixture onto the slice base and put in freezer for 15 minutes
  8. Melt 1/2 cup of dark chocolate melts and once melted stir in the extra 1 teaspoon of olive oil
  9. Spread melted chocolate over the cooled mixture
  10. Set in freezer for at least 30 minutes then take out and cut into 16 pieces
  11. Store in container in freezer (you can eat it directly from freezer or give it 10 minutes to come to room temperature)

Notes

If you need nut free replace cashews with sunflower seeds.
