This tasty meal is a family favourite and only requires one pan to wash up too!

🍴Serves:  4-6
🕒 Prep: 10 mins   Cook: 15-20 mins


  • 1 tablespoon extra virgin olive oil
  • 1 onion, diced
  • 2 cloves garlic crushed
  • 1-2 capsicums (your choice of colour, I like to use red), diced
  • ½ teaspoon sugar
  • 1 teaspoon cumin
  • 1 paprika
  • Chilli flakes, to taste (optional)
  • 2 x 425g tinned tomatoes
  • 6 eggs (less if smaller pan)


  1. Heat oil in pan on medium heat and add diced onion and garlic. Sauté for 3 minutes
  2. Add capsicum and cook for another 5 minutes
  3. Add sugar and spices and cook for 1 minute
  4. Add tinned tomatoes and bring to simmer
  5. Reduce heat slightly and crack eggs onto tomato mixture. Leave space between each egg. I do 5 around the outside & one in the middle
  6. Cover and cook for 5-7 minutes or until eggs are cooked to your liking
