one pan eggs and home-made tomato sauce


  • 1 tablespoon oil
  • 1 onion, diced
  • 2 cloves garlic crushed
  • 1-2 capsicum (your choice of colour, I like to use red), diced
  • 2 x 425g tinned tomatoes
  • 6 eggs (less if smaller pan)
  • 1/2 teaspoon sugar
  • 1 teaspoon cumin
  • 1 paprika
  • chili flakes, to taste


  1. Heat oil in pan (medium heat) and add onion and garlic. Satuee for 3 minutes.
  2. Add capsicum and cook for 5 minutes
  3. Add sugar and spices and cook for 1 minute
  4. Add tinned tomatoes and bring to simmer
  5. Reduce heat slightly and crack eggs onto tomato mixture (leaving space
  6. between each egg. I do 5 around the outside and one in the middle)
  7. Cover and cook for 5-7 minutes or until eggs are cooked to your liking
