one pot gnocchi

Ingredients

  • 1 onion
  • 1 teaspoon garlic
  • 1 tablespoon extra virgin olive oil or vegetable oil
  • 1 zucchini
  • 1 carrot
  • handful mushrooms
  • 420g red kidney beans or lentils, drained
  • 1 jar passata (tomato puree in a jar, in supermarket in pasta section)
  • Gnocchi (either bought or here is our home-made recipe)
    optional – fresh parsley (if you have)

Directions

  1. Chop onion
  2. Mince garlic
  3. Dice zucchini, carrots and mushrooms
  4. Heat oil in pan
  5. Add onion and garlic
  6. Cook for a few minutes
  7. Add veggies, cook for further 2-3 minutes
  8. Add pasada and beans
  9. Cook for another 2 minutes
  10. Add gnocchi and cook for 10 minutes (if using home-made gnocchi only cook for 5 mins)

Notes

Garnish with some fresh parsley if you have.
