rice pudding

 

Ingredients

  • 1 cup leftover rice
  • 1 cup milk of your choice
  • 1/2 teaspoon vanilla paste
  • 1 egg, lightly beaten
  • 1/4 cup sweetener (caster sugar, brown sugar, honey or maple syrup)

 

Directions

  1. In a pot mix together milk and rice
  2. Cook rice and milk for 15 mins on medium heat
  3. Add beaten egg, vanilla and sweetener
  4. Cook, stirring constantly for 2 minutes

 

Notes

Serve with fruit (fresh or stewed fruit or warmed frozen fruit or drained canned fruit)
