roasted sweet potatoes

 

Ingredients

  • 3 medium sweet potatoes
  • 2 teaspoons minced garlic
  • 1 tablespoons olive oil
  • 2 teaspoons butter (melted)
  • 1/2 cup grated Parmesan Cheese
  • ½ teaspoon dried Italian or mixed herbs

 

Directions

  1. Preheat oven to 200 degrees Celsius
  2. Cut sweet potatoes into 2 cm cubes
  3. Mix together garlic, oil, butter, Parmesan cheese and herbs in a bowl
  4. Mix in sweet potatoes and coat well
  5. Line a tray with baking paper
  6. Spread sweet potatoes on tray
  7. Cook for 25 minutes or until soft and golden

 

Notes

No need to peel sweet potato unless skin is super dirty just wash and scrub to remove dirt
