These strawberry and dark chocolate muesli bars make a lovely addition to any lunchbox, picnic or snack. Filled with nutritious oats, delicious strawberries and smooth dark chocolate, these muesli bars can be enjoyed fresh out of the oven or stored in the freezer for later.

Ingredients

  • 2 cups rolled oats
  •  ½ cup wholemeal flour
  •  ½ cup shredded coconut
  • 1 cup diced strawberries (about ½ punnet)
  • ¼ cup olive oil
  • ¼ cup maple syrup or honey
  •  ½ teaspoon vanilla essence
  • cup dark choc melts

Directions

  1. Preheat oven to 180°C
  2. In a large bowl mix oats, flour and coconut
  3. Mash strawberries in a separate bowl with fork until mashed but still chunky and add strawberries to oat mixture
  4. In separate bowl (you can use empty strawberry bowl), combine oil, syrup and vanilla
  5. Mix liquid into oats and strawberries
  6. Continue mixing until well combined
  7. Line a slice tray with baking paper
  8. Place mixture into tray and with wet hands press down into tin with your hand (firmly press it down)
  9. Bake for 40 minutes
  10. Allow to cool in pan
  11. Melt chocolate on medium heat in microwave (about 2 minutes on half heat)
  12. Drizzle over muesli bars
  13. Allow to cool and cut into pieces (warning: do not cut into pieces until it is completely cool or it might crumble)

Notes

This recipe is freezer friendly. You can pop a frozen muesli bar into a lunchbox and it will be defrosted by lunchtime.
