Teriyaki Salmon Noodles Recipe

This easy dinner recipe combines the best parts of a noodle stir-fry with a tasty piece of grilled salmon. Feed the family this delicious, nutritious meal, on the table in less than 30 minutes.

Ingredients

  • 1 packet soba or rice noodles
  • 1/3 cup soy sauce
  • 1-2 tablespoons honey
  • 1 teaspoons crushed garlic (used fresh or jarred for ease)
  • 2 teaspoons crushed/grated ginger (use fresh or jarred for ease)
  • 1 tablespoon warm water
  • 400-500g salmon (ideally four fillets)
  • 2 carrots, sliced
  • 1 zucchini, diced
  • 1 red capsicum, sliced
  • 1 bunch asparagus or choy sum, chopped
  • 1/3 cup cashews
  • 3 tablespoons sunflower oil (or extra virgin olive oil)

Directions

  1. Prepare noodles (as per packet using soaking or cooking)
  2. To make the teriyaki sauce, in a small bowl combine soy sauce, honey, garlic, ginger and warm water
  3. Stir to combine (if honey doesn’t melt with warm water, microwave the mixture for 10 seconds)
  4. Place salmon into marinade
  5. Cut carrot and capsicum into sticks, zucchini in half moons and asparagus into large pieces
  6. Heat 1 tablespoon oil in small saucepan
  7. Add salmon pieces to pan (leave marinade in bowl) and cook for about 5 mins each side until cooked through (test by cutting in half and it should change colour and texture)
  8. Using another frying pan or wok, add remaining oil and add carrots and zucchini. Cook, stirring often, for 5 mins (if you want to save dishes then cook veggies in same pan after salmon)
  9. Add red capsicum, asparagus and nuts to veggies
  10. Spoon half the marinade onto salmon
  11. Mix the rest of the marinade into the veggies and cook for a few minutes (until your desired crunch is reached)
  12. Drain noodles and mix with veggies
  13. Serve in bowls and top with a piece of salmon

Notes

Try adding some sweet potato noodles in the soba or rice noodles. You can either buy these or make some with a spiralizer.
