Veggie Gratin

Spice up your vegetables with this delicious and easy cheesy topping. The kids can help choose what goes in to this veggie gratin, so that way, they’ll be more likely to eat it!

?Serves: 6
Prep: 15 mins Cook: 35-45 mins

Ingredients

  • Lots of veggies (try 1/2 cauliflower, 1 swede, 1 head broccoli, 4 carrots, 2 zucchini, 1 sweet potato or piece of pumpkin)
  • 1 tablespoon of butter
  • 2 tablespoons plain flour
  • 2 cups of milk
  • Pinch of nutmeg
  • ½ cup Parmesan cheese, grated
  • 1 slice of multigrain toast (or 1/2 cup breadcrumbs)

Directions

  1. Pre-heat oven to 180°C
  2. Cut veggies into chunks and steam till almost soft (You can get the kids involved using our Foost first or next knife)
  3. To make white sauce:  in a pan, melt butter on medium heat. Add flour and mix for 30 seconds. Add milk slowly and mix with a whisk until thickened
  4. Remove from heat and stir in nutmeg
  5. Place veggies in oven proof dish, top with white sauce
  6. In a food processor blitz cheese and toast  (If using breadcrumbs, there is no need to do this)
  7. Sprinkle cheesy crumb mixture on top of veggies
  8. Bake for 15-20 mins
