Nothing beats coming home and putting together a warm, tasty and hearty meal like carbonara, no matter what time of the year it is! This carbonara is full of flavoursome ingredients and will hopefully be a recipe you and your family will love.

Ingredients

  • 1 packet pasta of your choice (500g)
  • 2 garlic cloves crushed
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 1 stick  celery chopped
  • 1 cup chopped pumpkin
  • 1 zucchini chopped
  • 1 cup baby spinach
  • 3 rashes natural bacon
  • 300 ml light n creamy cooking cream
  • 1/2 cup parmesan cheese

Directions

  1. Bring a large pot of water to the boil
  2. Boil the pasta for approximately  8-10 mins or to your liking
  3. Set aside the pasta
  4. Heat oil in a large pan over a medium heat
  5. Add onion, garlic, celery, pumpkin, zucchini, spinach and bacon, cook until soft
  6. Add cream, cheese, spinach and stir
  7. Add the cooked pasta and stir
  8. Transfer the pasta to a bowl and scoop carbonara sauce on top

Notes

You can add almost any veggie you like to this pasta such as carrots, grated eggplant or leeks.
