zucchini chips

We love the zucchini chips from Grill’d so we thought we would make our own. These are easier to make than you think, and have a nice crunch to them.

🍴Serves: 4
🕒 Prep: 10 mins  Cook: 30 mins


    • 2 medium zucchinis
    • 1 cup panko bread crumbs
    • ½ cup finely grated parmesan cheese
    • 1 egg


    1. Preheat oven to 200°C
    2. Wash and cut zucchini by cutting into thirds and then each third into 4 to 6 long pieces
    3. In a shallow bowl mix the breadcrumbs with the parmesan cheese
    4. In a medium bowl, lightly beat the egg
    5. Add zucchini to egg and mix to coat (it will go all gooey over zucchini)
    6. Take a piece of zucchini coated in egg and place in bowl with breadcrumbs and cover with breadcrumbs (you might need to stick the crumbs on a little)
    7. Place on a lined tray
    8. Cook for 30 mins
