  • 1-2 zucchini
  • 1/2 cup plain flour
  • 2-3 eggs
  • 1 cup breadcrumbs (or 3 pieces multigrain breaded, toasted and blitzed in food processor)
  • Olive Oil for frying
  • 2 tablespoons tomato paste (salt-reduced)
  • 1 cup grated cheese



  1. Preheat oven to 180 degrees celcius
  2. Cut zucchini in half and then slice into pieces longways
  3. Get out three bowls. Put flour in one, beaten eggs in the next and breadcrumbs in the third
  4. Take a piece of zucchini and dip both sides in flour, then egg, then breadcrumbs
  5. Repeat with remaining zucchini
  6. Heat oil in a pan on medium heat. Cook zucchini in pan until crumbs are golden, about three minutes each side
  7. Line a baking tray and place cooked zucchini onto it
  8. Spread tomato paste on zucchini
  9. Top with grated cheese
  10. Cook in oven for 20 minutes or until cheese is golden
  11. Serve with a crunchy salad
