Ingredients

  • 1/4 cabbage or half bowl spinach
  • 1 carrot
  • 1 cucumber
  • Handful snow peas
  • 1 red capsicum
  • 1/2 head broccoli
  • 1/2 can water chestnuts, drained
  • 1/2 packet of crunchy noodles
  • 1 handful coriander
  • 1 handful mint
  • 1/3 cup chopped peanuts or cashews (or nuts of your choice)
  • 1 lime
  • 1 tablespoon sesame oil
  • 2 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 clove garlic (crushed – use fresh or jarred for ease)
  • 1 chilli, seeded and chopped (optional)

Directions

  1. Cut veggies into thin matchsticks. Dice broccoli.
  2. Roughly chop herbs
  3. To make dressing, juice lime. Combine lime juice, soy sauce, oil, sugar and garlic into a jar. Shake until sugar dissolved (or you can whisk it in a small bowl)
  4. Combine all ingredients together and enjoy

Notes

  • Add any veggies you like. Try some lightly cooked asparagus or some celery or bean sprouts
  • Try adding 1 tablespoon of fish sauce or 1 teaspoon of grated (or jarred) ginger to the sauce for a different flavour
