Ingredients

  • 2 tablespoons olive oil
  • 1 leek or onion
  • 2 garlic cloves
  • 2 carrots
  • 4 sticks celery
  • 2 zucchini
  • 1 swede
  • 1 1/4 cups dry soup mix
  • 1.5 – 2 litres (6-8 cups) chicken stock
  • 1 cup cold water
  • 1kg skinless chicken lovely legs or drumstick/chicken thigh without skin

Directions

  1. Dice leek or onion
  2. Crush garlic
  3. Wash and dice carrots, celery and zucchini
  4. Peel and dice swede
  5. Heat oil in a pan on medium heat
  6. Add onion/leek and garlic and sauté for 2 minutes
  7. Add veggies and cook for 2 minutes
  8. Add stock, cold water, soup mix and chicken
  9. Cook for about 45 – 60 minutes or until veggies are soft
  10. Remove chicken, take of bone, cut into pieces and return to soup
