per serve

  • 1 wholemeal roll
  • 2 teaspoons mayonnaise, mashed avocado or dip of your choice
    (try tzatziki)
  • 2 medium circles red capsicum (somewhat smaller than cucumber circles)
  • 2 green olives
  • 1 lettuce leaf
  •  grated carrot
  • 3 slices cucumber
  • 1 slice of cheese
  • 1 slice capsicum
  • 2 toothpicks


  1. Spread roll with mayonnaise, avocado or dip of your choice
  2. Wash and dry veggies
  3. Top dip with grated carrot, cucumber slices, cheese and lettuce
  4. Add red capsicum slice for the tongue (sticking out)
  5. Close roll
  6. Pop olives on toothpicks and insert for eyes


You can use any vegetable instead of those listed. Can substitute eyes for cherry tomatoes
