Noelle’s plum cake

2 eggs
1/3 cup brown sugar
1 teaspoon vanilla
1 and 3/4 cups wholemeal self raising flour
250 g plain yoghurt
50ml oil (2 tablespoons)
Fresh or Tinned plums (or apricots)


  1. Preheat oven to 180ºC
  2. Take plums (or apricots), halve the fruit with a knife and remove the stone
  3. To make the cake: whisk the eggs and sugar together in large bowl until pale and fluffy. Mixture should slightly thicken (approximately 2 minutes)
  4. Add vanilla essence
  5. Sift the flour and fold into the bowl containing the egg, sugar and vanilla mixture
  6. Mix in the yoghurt and then the oil. Make sure it is thoroughly combined but do not overmix or cake will become tough
  7. Lightly grease a cake tin
  8. Take the plum (or apricots) segments and place curved side down to cover the bottom of the tin
  9. Carefully pour batter on top of fruit
  10. Bake at 180ºC in a preheated oven for 30-35 minutes until a skewer inserted into the centre comes out clean
  11. Leave pudding in tin to cool for 10 minutes before transferring to a cake rack to cool


This recipe is so versatile- use fresh or tinned fruit. Plums or apricots work well, but can use other fruit like apple and pear
