Roasted maple pumpkin is a quick twist on classic roasted veg. Test it out for yourself with our 3 ingredient recipe. It can be enjoyed as part of your breakfast, lunch or dinner.
Prep: 5-10 mins Cook: 25 mins
- 500g pumpkin
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
- Preheat oven to 180ºC
- Wash pumpkin skin and dice pumpkin into 2cm pieces (you can do larger if you have more time)
- Line tray with baking paper
- In a bowl mix pumpkin pieces, oil and maple syrup
- Place on baking tray
- Cook for 25 mins or until pumpkin is soft and slightly coloured
