roasted maple pumpkin

 

Ingredients

  • 500 gram pumpkin
  • 1 tablespoon maple syrup
  • 1 tablespoon olive oil

 

Directions

  1. Preheat oven to 180 degrees
  2. Wash pumpkin skin and dice into 2cm pieces (you can do larger if you have more time)
  3. Line tray with baking paper
  4. In a bowl mix pumpkin pieces, oil and maple syrup
  5. Place on baking tray
  6. Cook for 25 minutes or until pumpkin is soft and slightly coloured
